Treat time Tried and tested!!!

Treat time Tried and tested, and definitely delicious apple crumble muffins made a few weeks ago with Granny Smith apples fresh off the tree!  A perfect sweet snack that will also help fill you up because of the fibre, protein and healthy fats from the almond meal, chia seeds, apples and pecan nuts.

Serves 12


Ingredients:

  • 2 1/2 cups almond meal or mixed nuts
  • 1/4 cup arrowroot or cornflour
  • 2 tsp ground cinnamon
  • 1 granny smith apple, peeled and diced
  • 1/4 cup chia seeds
  • 1 cup water
  • 1/2 cup rice malt syrup (or any other syrup/sweetener)
  • 1 tbsp apple cider vinegar
  • 1 cup pecans

Method:
Firstly turn you oven onto 180 degrees and prepare/grease a muffin tray for 12 muffins. Mix almond meal, arrowroot and cinnamon in a bowl, then throw in the apple and mix thoroughly. In a separate bowl mix chai seeds, water, apple cider vinegar and rice malt syrup (reserve a little to add to the top of the muffins), then pour into the dry ingredients and combine. Pour mixture into muffin tray and top with chopped pecans and a splash of rice malt syrup and bake for approximately 20 -25 minutes to until golden brown.
