Delicious home made vegetable stock!

Home made stock is something that is great to have in the fridge and it lasts forever! Its also always good to know exactly what has gone into your stock. This is a fantastic recipe from the thermomix cook book;

Blend together the following ingredients;

  • 2 carrots
  • 2 celery stalks
  • 1 brown onion
  • 1 tomato
  • 1 zuchinni
  • 2 garlic goves
  • 1 bay leaf
  • 1-2 sprigs of fresh basil
  • 1-2 sprigs of fresh sage (leaves only)
  • 1-2 sprigs of fresh rosemary (leaves only)
  • 8 sprigs of fresh flat leaf parsley

Then, if you have a thermomix add the salt and olive oil below and cook for 20 minutes on the varoma setting on speed 1. Then blend until smooth!

  • 150g rock salt
  • 1 tbsp olive oil

If you don't have a thermomix, cook on the stove top for 20 minutes stirring constantly, then blend until smooth. 

This stock will last for a very long time because of the salt content having a preserve affect. All you need to do is mix 1 tbs per 500 ml of water and your stock is ready to use!!!
