Delicious blueberry muffins!

These blueberry muffins are a must try! Filled with fibre, fruit, protein and healthy fats they make a great snack idea for work or in the kids' lunchboxes

Ingredients:

  • 2 1/2 cups almond meal or mixed nuts
  • 1/4 cup arrowroot or cornflour
  • 2 tsp ground cinnamon
  • 2 cups frozen blueberries 
  • 1/4 cup chia seeds
  • 1 cup water
  • 1/2 cup rice malt syrup (or any other syrup/sweetener eg. maple syrup)
  • 1 tbsp apple cider vinegar
  • 1 cup pecans

Method:
Firstly turn you oven onto 180 degrees and prepare/grease a muffin tray for 12 muffins. Mix almond meal, arrowroot and cinnamon in a bowl, then throw in the blueberries and mix thoroughly. In a separate bowl mix chai seeds, water, apple cider vinegar and rice malt syrup (reserve a little to add to the top of the muffins), then pour into the dry ingredients and combine. Pour mixture into muffin tray and top with chopped pecans and a splash of rice malt syrup and bake for approximately 20 -25 minutes to until golden brown.
